FORT MYERS, Fla. – This morning, we’re firing up the WINK Kitchen with Bubba’s Roadhouse in Cape Coral. It’s one of several restaurants participating in the Taste of Lee. Jay Johnson gave us a little preview with his incredible fajita recipe. Flank Steak: Cleaned and marinated in Fajita season/water Cooked in oven at 350 degrees until done (personal preference) Let rest after coming out of oven to maintain juiciness Cut against the grain on the bias to increase tenderness Veggies: Cut Peppers and Onion and saute with seasoning and butter until tender Place meat, veggies in flour tortilla and top with lettuce, pico de gallo
