What You’ll Need:
1/4 cup olive oil
1/2 cup lime juice
4 cloves garlic, minced
1/2 cup plus 2 tablespoons chopped fresh cilantro, divided
1 teaspoon ground cumin
1 1/2 teaspoons salt, divided
1/2 teaspoon black pepper
2 pork tenderloins (1-1/2 to 2 pounds total)
1 (15-ounce) can black beans, rinsed and drained
1 1/2 cups fresh salsa
What To Do:
In a large resealable plastic bag, combine oil, lime juice, garlic, 1/2 cup cilantro, the cumin, 1 teaspoon salt, and the pepper. Add pork; marinate in refrigerator 1 hour.
Meanwhile, in a medium bowl, combine black beans, salsa, the remaining cilantro, and the remaining salt; mix well. Refrigerate until ready to serve.
Preheat oven to 350 degrees F. Place tenderloin on baking sheet, discard excess marinade.
Bake 25-30 minutes, or until desired doneness. Slice and serve with black bean salsa.
